1 large Yellow pepper (deseed and dice)
Half a cucumber (deseed and cube)
150g pine nuts
4 tablespoons light mayonnaise
1 tablespoon horseradish sauce
4 smoked mackerel fillets
Combine pepper, cucumber and pine nuts in a bowl
Combine Mayonnaise and horseradish stirring two tablespoons into the vegetables. Serve each fillet with a portion of the vegetables and place mayo as a side condiment.
